Make it into vinegar.  When my wife was still living she had a wooden barrel that I bought in a Sunday market in Bruxelles that she put all the stale wine into... it makes delightful vinegar.</description>

Smell and taste it like you were at a restaurant and it had just been uncorked. You don&#039;t have to know wines well to recognize the smells of mold or vinegar. That&#039;s all you&#039;re checking for, now and when eating out.

If it smells of neither, it&#039;s safe to drink. If you&#039;re not sure you want to, you can always cook with it. Many seafood and poultry recipes involve adding white wine.

If it&#039;s gone to vinegar (unlikely in this short a time) you can use it to make salad dressing, mixed with oil and spices.</description>
